Chopped Veggie Salad

Ingredients

  • 6-8 Persian style cucumbers
  • 4 stalks of celery
  • 1/3 head of large cauliflower
  • 4 radishes
  • 1 small or medium sized onion
  • 2-3 garlic cloves
  • 3 medium sized carrots
  • 1 lemon
  • sea salt
  • cold pressed olive oil

Cooking Directions

  1. Chop up all the ingredients finely excluding the lemon and sea salt.
  2. Squeeze fresh lemon juice over the salad and sea salt to taste.
  3. Put in an airtight container and keep in the fridge.
  4. When ready to eat splash some olive oil over the salad.
  5. Devour when hungry!
