Chopped Veggie Salad
- 6-8 Persian style cucumbers
- 4 stalks of celery
- 1/3 head of large cauliflower
- 4 radishes
- 1 small or medium sized onion
- 2-3 garlic cloves
- 3 medium sized carrots
- 1 lemon
- sea salt
- cold pressed olive oil
- Chop up all the ingredients finely excluding the lemon and sea salt.
- Squeeze fresh lemon juice over the salad and sea salt to taste.
- Put in an airtight container and keep in the fridge.
- When ready to eat splash some olive oil over the salad.
- Devour when hungry!
